Hand-plucked at dawn, in the freezing October and November months of Kishtwar. The valley's saffron carries its own GI tag, Kishtwar Saffron, recognised by the Government of India as a distinct variety with a singular depth, crimson hue and coumarin-rich aroma. Sun-dried on cloth racks in the cold mountain air. Sorted thread by thread. Never blended.
